Skillet Gnocchi w/ Busted Cherry Tomatoes

Ingredients

Skillet Gnocchi / Busted Cherry Tomatoes:
  • 3-4 Chicken thighs, boneless
  • Gnocchi of choice
  • 1 pint of cherry tomatoes, halved
  • Mozzarella cubes/balls, as much as you'd like
  • 2-3 garlic cloves
  • 1-2 tbsp tomato paste
  • Fresh basil, a handful
  • White wine, just a splash!
  • Spices: salt, pepper & paprika

Instructions

  1. Start with prepping & searing the chicken! Add salt, pepper & paprika to chicken thighs, and sear in a little olive oil on medium-high heat for 1-2 mins on each side.
  2. Once you get a nice brown color on the chicken, remove from pan and set aside. It's OK if not fully cooked yet, it'll finish cooking in the oven.
  3. In that same pan, add your garlic and tomato paste, and cook for just a minute. Add in cherry tomatoes and sauté for 10-12 minutes until tomatoes start to soften and burst. You can lower heat a bit as they cook down.
  4. Deglaze pan with a heavy splash of white wine. This will add some nice flavor! Let the alcohol cook down for a couple mins.
  5. Meanwhile, cook your gnocchi according to package (be sure to salt the water).
  6. Add cooked gnocchi to the tomatoes and mix in a small handful of torn basil leaves. Nuzzle in chicken, and top with mozzarella cubes.
  7. Bake at 400 for 10-12 minutes until cheese starts to bubble & chicken is fully cooked through! Optional: top with freshly grated parm.

Notes

These ingredients are approximate! I strongly dislike following rigid recipes, so take these measurements with a grain of salt, if you will, and follow your gut. Taste test & adjust to your liking! There's a lot of wiggle room in these types of recipes, especially Italian food. One of the many reasons it's my favorite cuisine!
