Ingredients
Creamy Slaw Dressing:
- 1/2c sour cream + Greek yogurt (I combine to cut cals/fat)
- 1/4c fresh cilantro
- 1/2 jalapeño
- 1-2tsp fresh lime juice
- 1-2tsp honey
Shrimp Taco
- Start with some shrimp! I use frozen shrimp, peeled & deveined.
- Taco seasoning. I'll link my favorite brand below (that's garlic & onion free).
- Tortilla's of choice
- Red cabbage
- Mango Salsa
Instructions
To Prep the Creamy Slaw:
- Chop up purple cabbage. Make as much as you need for recipe on hand.
- In a blender, combine all creamy slaw ingredients (minus the cabbage, duh).
- Drizzle the dressing over chopped cabbage until evenly coated.
To Make the Taco
- Remove tails from shrimp, and season with taco seasoning.
- Add a little oil to the pan, and cook shrimp until fully cooked through. Usually just a few minutes on each side!
- Grab your tortilla of choice and start building!
- Layer with creamy slaw first, then cooked shrimp and top with the mango salsa.
- An extra drizzle of cream slaw dressing and a squeeze of fresh lime juice atop.
