Chickpea Cookie Dough

Hey, do you have a can of chickpeas + some PB in your pantry?! Well you're in luck. Chickpea chocolate chip cookies are in your near future.

Ingredients

Chickpea Cookie Dough
  • 1 can of chickpeas (rinsed/drained)
  • 1/2c all natural PB
  • 1/4c of maple syrup
  • 1 tsp baking powder
  • 1 tbsp chia seeds
  • Chocolate chips (dairy-free optional)

Instructions

  1. Blend everything minus the chocolate chips into food processor or blender.
  2. Add in chocolate chips
  3. Form into dough balls, or simply add to mason jar and store in fridge
  4. If baking, bake at 350 for about 12 minutes.
  5. Top cookies with flakey salt.

Notes

+If the dough seems a little too "sticky", sprinkle in a little almond flour! (or any flour you have in your pantry).

+Chia seeds optional, I just like to toss a little into recipes for added nutrients. This recipe will probably still work without. 

+Only use an all natural PB with peanuts only. Any other added ingredients can mess with the consistency/oil.

+I prefer to add flakey salt on TOP of my chocolate chip cookies, but you can also add a little to the batter itself.
