Quinoa & Veggie Salad w/ Goat Cheese

This is one of my favorite meal preps for the week. Packed with flavor and nutrients!

Ingredients

Quinoa Salad w/ Goat Cheese
  • Quinoa, cooked
  • Red pepper, finely diced
  • Red onion, finely diced
  • Cucumber, finely diced
  • Chickpeas, rinsed
  • Parsley leaves, chopped
  • Fresh lemon juice (just a little!)
  • Balsamic vinaigrette dressing of choice
  • Salt + pepper to taste.
  • OPTIONAL: grilled chicken, cubed
  • OPTIONAL: goat cheese crumbles (SO GOOD).

Instructions

Here's What You Do...
  1. Cook your quinoa. I find that the microwavable quinoa from Trader Joe's comes out a bit mushy, so I like to cook it on the stovetop. Take off stove once cooked, and let it cool.
  2. Finely dice all your vegetables, coarsely chop the parsley leaves, and chop your grilled chicken if you have it. If you want to keep this vegan, obviously omit the chicken.
  3. Mix the veggies, quinoa, and parsley together. Drizzle with balsamic, squeeze fresh lemon juice and give it one more good mix to evenly coat everything. Sprinkle with goat cheese. Enjoy :)

Notes

Storage: Leftovers can be refrigerated in an airtight container for up to 3 days.


*Add in a handful of arugula for added nutrients!
