Quinoa & Veggie Salad w/ Goat Cheese

This is one of my favorite meal preps for the week. Packed with flavor and nutrients!
Ingredients
Quinoa Salad w/ Goat Cheese
- Quinoa, cooked
- Red pepper, finely diced
- Red onion, finely diced
- Cucumber, finely diced
- Chickpeas, rinsed
- Parsley leaves, chopped
- Fresh lemon juice (just a little!)
- Balsamic vinaigrette dressing of choice
- Salt + pepper to taste.
- OPTIONAL: grilled chicken, cubed
- OPTIONAL: goat cheese crumbles (SO GOOD).
Instructions
Here's What You Do...
- Cook your quinoa. I find that the microwavable quinoa from Trader Joe's comes out a bit mushy, so I like to cook it on the stovetop. Take off stove once cooked, and let it cool.
- Finely dice all your vegetables, coarsely chop the parsley leaves, and chop your grilled chicken if you have it. If you want to keep this vegan, obviously omit the chicken.
- Mix the veggies, quinoa, and parsley together. Drizzle with balsamic, squeeze fresh lemon juice and give it one more good mix to evenly coat everything. Sprinkle with goat cheese. Enjoy :)
Notes
Storage: Leftovers can be refrigerated in an airtight container for up to 3 days.
*Add in a handful of arugula for added nutrients!
