Open Face Blueberry "Pie" Toast With Greek Yogurt & Peanut Butter

I'll be honest here, I would NEVER think to put this combination of flavors together. Greek yogurt on toast sounds kinda... interesting? Right?

I came across this recipe on social media, (shout out: @leefromamerica) and 1. holy beautiful &  2. I'm going to give it a try because I have an entire pack of blueberries that have seen better days.

ALSO, I was craving something sweet and peanut butter-y so I'll give it a go... 

I tweaked and added a couple things to this recipe to enhance flavor, and I think it's a winner. The result is a light(ish), refreshing dessert without all the guilt.

K maybe a little guilt, it's not a salad... but hey, girls gotta live.

Here's what you need:

Whole grain toast 

Greek yogurt (I used fage)

Peanut butter

Coconut flakes

1/2 cup blueberries

1/3 cup water

Squeeze of lemon juice

Drizzle of honey

Sprinkle of hemp seeds

Directions:

  1. To make your blueberry compote, simply sizzle on a stove with water for a few minutes. Smash up some of the berries. Squeeze lemon juice for added flavor.

  2. Toast your bread, and smear the greek yogurt, peanut butter, blueberry compote, coco flakes, hemp seeds & honey drizzle. 

  3. OPTIONAL: I added a little tapioca flour to thicken the compote, but it's not necessary!
